Soy Broccoli Rice Stir Fry
Ingredients
  • 1 1/2 cups uncooked long-grain rice
  • 1 tablespoon vegetable oil
  • 1 (16 ounce) package frozen broccoli florets, thawed
  • 3 green onions, diced
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

In a large cooking vessel, bring 3 cups of water to a rolling boil. Introduce cooked rice into the mixture and then lower the heat, cover it with a lid, and let it cook for 20 minutes.

In a large skillet, heat oil over medium temperature. Sauté broccoli until it reaches the desired level of tenderness and add scallions to the mixture. Set the skillet aside for a moment.

In the same skillet, scramble eggs and then return the broccoli mixture to the pan. Combine cooked rice, soy sauce, salt, and pepper in the skillet.
