  • 1 pound skinless, boneless chicken breast, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 1 bunch scallions, diced
  • 1 (15 ounce) can diced tomatoes with green chiles, undrained
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 4 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons granulated garlic
  • 2 teaspoons onion powder
  • 1/4 teaspoon hot smoked paprika, or more to taste
  • salt and ground black pepper to taste
  • 1 (8.5 ounce) package dry corn muffin mix
  • 1/3 cup milk
  • 1 egg

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Heat a generous amount of oil in a Dutch oven over medium heat and add the chicken. Cook, stirring occasionally, until it reaches an internal temperature of 165 degrees Fahrenheit and is no longer pink inside, taking around 5 to 7 minutes.

Add sliced carrots, chopped celery, diced bell pepper, and scallions to the pot and cook until they are tender, approximately 5 minutes.

Add diced tomatoes, cooked black beans, chili powder, ground cumin, minced garlic, onion powder, smoked paprika, salt, and black pepper to the pot. Stir everything together to create a harmonious blend of flavors.

As the mixture simmers, prepare the cornbread batter by combining the dry mix with milk and egg in a separate bowl.

Once the Dutch oven has stopped simmering, remove it from the heat and spread the cornbread batter evenly over the top of the chicken mixture to form a crust.
