- 1/3 cup vegetable oil
- 1/4 cup fresh lime juice
- 2 tablespoons chili powder, or to taste
- 2 teaspoons ground cumin
- 1/2 teaspoon salt
- 2 cloves garlic, crushed
- 1 1/2 cups whole kernel corn
- 1 (15 ounce) can black beans, drained and rinsed
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1/2 cup fresh cilantro leaves
- 1 cup chopped roma (plum) tomatoes

Boil a substantial container of salted water until it reaches a rolling boil.

Add pasta to the boiling water and cook for approximately 8-10 minutes, or until it reaches your desired level of firmness; drain the excess water.

In a large mixing container, merge olive oil, freshly squeezed lime juice, chili powder, ground cumin, salt, and minced garlic.

Gradually incorporate the cooked pasta into this mixture; allow it to cool down to a comfortable temperature, stirring occasionally throughout the process.

Once cooled, add corn, beans, diced green pepper, sliced red pepper, and half of the remaining cilantro leaves to the pasta mixture; stir well.

Transfer this mixture onto a serving platter and garnish with sliced tomatoes and the remaining cilantro leaves.
