- 1 cup salsa, divided
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh cilantro
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 cup chopped tomatoes
- 7 (8 inch) flour tortillas
- 2 cups shredded reduced-fat Cheddar cheese
- 1 cup salsa
- 1/2 cup sour cream

Heat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

In a large container, crush pinto beans using a fork or masher until they're smooth. Combine the mashed beans with 3/4 cup of a spicy tomato-based sauce and minced garlic.

In another container, blend together 1/4 cup of the same spicy tomato-based sauce, chopped cilantro, black beans, and diced tomatoes.

Place a single tortilla in a circular baking dish. Spread the pinto bean mixture evenly, leaving about 1/2 inch of space around the edges. Add a layer of cheese on top, followed by another tortilla to act as a lid. Spread the black bean mixture over this layer, topping it with another 1/4 cup of cheese. Repeat the process two more times, finishing with a layer of pinto bean mixture and cheese on top. Cover the entire dish with the final tortilla.

Cover the baking dish with aluminum foil and bake in the preheated oven for approximately 40 minutes. Remove from the oven, cut into wedges, and serve with a side of spicy tomato-based sauce and a dollop of sour cream.
