Southwest Green Chile Meatloaf
Ingredients
  • 1 1/2 pounds hamburger
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (6 ounce) can diced green chiles
  • 3/4 cup chopped onion
  • 1/2 cup milk, or as needed
  • 2 eggs
  • 15 crushed crackers
  • 1/2 teaspoon salt, or more to taste
  • 1/2 teaspoon ground black pepper
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently, 175 degrees Celsius.
2
Next, take a moment to lubricate the interior of your loaf pan with some cooking spray or oil to prevent any food residue from sticking.
3
Meanwhile, combine the ground beef, diced tomatoes, green chilies, chopped onion, milk, eggs, crushed crackers, salt, and pepper in a large mixing bowl.
4
Once the ingredients have been thoroughly incorporated, pour the mixture into your prepared loaf pan.
5
Bake the mixture in your preheated oven until it reaches a safe internal temperature of 160 degrees Fahrenheit, or 70 degrees Celsius. This should take around an hour and ten minutes.
6
After the mixture has finished cooking, remove it from the oven and let it rest in the loaf pan for a short 10 minutes before transferring it to a serving dish.
