  • 1 pound boneless pork loin, cubed
  • 1/4 cup masa harina
  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 3 cups chopped fresh tomatoes
  • 2 cups diced green chile peppers
  • 2 cups low-sodium beef broth
  • 1 tablespoon ground cumin
  • 1 large potato, cubed
  • 3 cloves garlic, minced
  • 2 teaspoons chopped fresh oregano
  • 2 teaspoons chopped fresh cilantro
  • 1 dash cayenne pepper
  • salt to taste
  • ground white pepper to taste

Combine beef tenderloin cubes, pork loin cubes, and masa harina in a sealed plastic bag. Gently massage the contents together to ensure even coating of the meat.

Heat a generous amount of olive oil in a large skillet over medium-high heat. Carefully add the meat cubes and stir frequently until they achieve an even, rich brown color, approximately 10 minutes.

Transfer the meat cubes along with red onion, tomatoes, green chile peppers, beef broth, cumin, diced potato, minced garlic, dried oregano, chopped cilantro, and a pinch of cayenne pepper to a slow cooker. Season with salt and white pepper to taste.

Cook the mixture on Low for an extended period of time, approximately 8 hours, or until the meat becomes tender and falls apart easily.
