Southern Tex-Mex Meatloaf
Ingredients
  • 1 serving cooking spray
  • 2 cups corn bread stuffing mix
  • 1 pound ground beef
  • 1 pound ground pork
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 2 eggs, beaten
  • 2 teaspoons seasoned salt
  • 1 teaspoon garlic and herb seasoning blend
  • 1/2 teaspoon ground black pepper
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently, 175 degrees Celsius.
2
Next, take a moment to prepare your loaf pan by spraying it with non-stick cooking spray, ensuring it is evenly coated.
3
Using a food processor or blender, grind the stuffing mix into fine crumbs and transfer it to a large bowl.
4
Mix in ground beef, ground pork, finely chopped onion, diced green pepper, crushed tomatoes, eggs, seasoned salt, and a blend of seasonings until well combined.
5
Using your hands, thoroughly mix the ingredients together to achieve a uniform consistency; shape into a prepared loaf pan.
6
Place the mixture in the preheated oven and bake until it reaches an internal temperature of 160 degrees Fahrenheit, or at least 72 degrees Celsius, which should take around 45 minutes to an hour.
7
Once cooked, remove the loaf from the oven and let it cool for 5 to 10 minutes before slicing.
