Southern-Style Hoppin' John with Bacon and Rice
Ingredients
  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 small jalapeno peppers, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 (15 ounce) can black-eyed peas, drained and rinsed
  • 1 (10 ounce) can diced tomatoes with habaneros (such as RO*TEL® Hot), drained
  • 4 slices cooked bacon, chopped
  • salt and ground black pepper to taste

Heat a large cooking vessel over medium temperature; melt butter in it until it starts to simmer. Combine the ingredients, starting with the onion, red bell pepper, jalapeño peppers, and garlic, in the melted butter. Continue to cook and stir these ingredients until they become soft and translucent, approximately 5 minutes have passed.

Next, add the cooked rice, black-eyed peas, diced tomatoes with habanero peppers, and crispy bacon to the pan. Season this mixture with salt and black pepper. Stir everything together thoroughly.

Finally, cook the combined ingredients for an additional 10 minutes to allow all the flavors to meld together.
