Ingredients
  • 2 large green tomatoes, sliced 1/3-inch thick
  • 2 teaspoons white sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup milk
  • 2 eggs
  • 1 1/4 cups all-purpose flour
  • 1 cup butter

Pre-treat each tomato slice by sprinkling a pinch of sugar, a dash of salt, and a few grinds of pepper to bring out its natural flavors.

In a separate bowl, whisk together milk and eggs until well combined. In another bowl, sift flour to create a light and airy texture.

Gently roll each tomato slice in the flour, making sure to coat it evenly, then gently shake off any excess flour. Next, dip the tomato slice into the egg mixture, coating it thoroughly, and finally press it back into the flour to seal in the flavors. Place the breaded tomato slices on a plate, making sure not to stack them, and repeat the process for the remaining slices.

In a large skillet, melt 1/2 cup of butter over medium heat. Once the butter has melted and started to simmer, carefully place the breaded tomato slices into the pan. Cook for 5-7 minutes on one side, or until golden brown, then flip them over and cook for an additional 5-7 minutes on the other side. As needed, add more butter to the pan to keep the tomato slices crispy and golden.
