Southern Slow-Cooked Green Beans
Ingredients
  • 6 slices bacon, sliced crosswise into 1/2-inch pieces
  • 1 onion, sliced lengthwise
  • 3 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 2 pounds fresh green beans, trimmed
  • 3 cups chicken broth
  • salt and ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste

Heat a saucepan over an intermediate flame; cook and blend the bacon in the hot pan until it is almost crispy, approximately 6 minutes. Introduce an onion into the pan and cook until the browned bits of food on the bottom of the pan have dissolved in the onion's juices and the onion is soft and golden, roughly 5 minutes. Mix in garlic and tomato sauce; cook until the garlic has softened, around 1 minute more.

Transfer green beans to a skillet and pour in chicken broth; raise the heat to a high level, add salt, black pepper, and cayenne pepper to the beans, and bring to a boil. The beans will begin to soften; switch the heat to a low-medium level and simmer for 1.5 hours, stirring occasionally. If the mixture appears dry, add more broth or water.

Adjust the levels of salt, black pepper, and cayenne pepper to your desired taste. Continue cooking until the beans are soft and tender, roughly 30 minutes more. Transfer the beans and some of the pan juices to a deep serving platter
