- 1 pound fresh shrimp - peeled, deveined, and tails removed
- salt and ground black pepper to taste
- 1/4 cup half-and-half, or more to taste
- 1 tablespoon dry sherry
- 1 green onion (green tops only), sliced

Begin by heating water in a large saucepan over high heat, waiting for it to reach its boiling point. Next, gradually incorporate the grits into the water using a whisk, stirring constantly to prevent lumps from forming. Once the mixture has started to thicken and become tender, reduce the heat to a lower setting, approximately medium-low, and continue to cook for 5-7 minutes, stirring every now and then.

During this time, blend the grits with a combination of three types of cheese - farmers cheese, goat cheese, and American cheese - until the cheese has fully melted. Remove the cooked grits from the heat source and keep them warm, ready to be used in future steps.

Meanwhile, melt a combination of butter and vegetable oil in a large skillet over medium heat. Add sliced tomatoes, 2 green onions, and minced garlic to the hot skillet and cook until the vegetables have reached their desired level of tenderness, approximately 5-7 minutes.
