Southern Pork Chops with Onion Gravy
Ingredients
  • 4 large bone-in pork chops, about 1 inch thick
  • 1 teaspoon poultry seasoning
  • salt and freshly ground black pepper to taste
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 1/2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/4 cup buttermilk
  • 1/4 cup water
Instructions
1
Gather all necessary components.
2
Apply a blend of spices to both sides of pork chops, including poultry seasoning, salt, and black pepper.
3
Heat a substantial amount of vegetable oil in a large cooking vessel over an elevated heat setting; introduce pork chops and sear them thoroughly on both sides, approximately 5 minutes per side. Transfer the cooked pork chops to a serving plate.
4
Eliminate any excess oil from the pan and melt butter within the same cooking vessel. Decrease heat to a moderate level; combine an onion with a small amount of salt and cook until the onion is deeply browned and caramelized, around 15 minutes.
5
Introduce garlic into the mixture and cook for a brief period of time, approximately 1 minute. Introduce flour into the blend and cook for an additional 2 minutes.
6
Pour chicken broth into the cooking vessel and stir, dissolving the browned residue at the bottom of the pan.
7
Combine juices that have accumulated on the plate containing pork chops with the sauce.
8
Blend buttermilk into the mixture until it is smooth and homogeneous.
9
Add water to the sauce. Bring the sauce to a gentle simmer, decrease heat to a low level and cook until onions begin to break down and the sauce is thickened, approximately 15 to 20 minutes.
10
Place pork chops into the sauce, spooning a generous amount of sauce over meat to coat it evenly.
11
Turn heat to a low level and simmer until chops are tender and cooked through, approximately 10 minutes. Adjust levels of salt and pepper as necessary and serve chops with a rich gravy on top.
