Place the pot over high heat to bring the mixture to a vigorous boil. Once boiling, decrease the heat to a gentle simmer and continue cooking until the beans are soft and palatable, typically taking 3 to 4 hours. During this time, periodically add more water as necessary to maintain the beans' moisture levels and prevent them from drying out.
