Ingredients
- 2 teaspoons butter, or as needed
- 2 (12 fluid ounce) cans evaporated milk
- 1 1/2 cups white sugar
- 2 cups pecans
- 1/4 cup butter
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
Instructions
1
Preheat your oven to the desired temperature as specified by a candy thermometer reading 235 degrees F (110 degrees C) or by observing the formation of a soft ball when a small spoonful of syrup is dropped into a glass of cold water, which should take around 5 to 8 minutes.
2
In the meantime, melt 2 teaspoons of butter in a 9x13-inch pan to prevent sticking.
3
Next, combine evaporated milk and sugar in a large, heavy stockpot and place it over medium heat. Stir the mixture constantly as it begins to boil, then continue stirring frequently until the syrup reaches the desired temperature.
4
Once the syrup has reached the specified temperature, stir in some pecans and a small amount of melted butter to add flavor and texture.
5
Continue cooking the mixture until solid crystals of candy start to form on the sides of the pot, taking around 30 minutes.
6
Remove the stockpot from the heat source and stir in some vanilla and almond extracts to enhance the flavor of the candy.
7
Pour the cooled candy mixture into the prepared 9x13-inch pan and let it sit for about 10 minutes before cutting it into squares.
