- 6 tablespoons unsalted butter, chilled and cut into small pieces
- 1/4 cup boiling water
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

Combine the peaches, white sugar, brown sugar, a pinch of cinnamon, nutmeg, lemon juice, and cornstarch in a large mixing container; thoroughly mix to coat the peaches evenly, then transfer them to a 2-quart baking dish. Bake in the preheated oven for an initial 10 minutes.

Simultaneously, combine flour, white sugar, brown sugar, baking powder, and salt in a large mixing container. Blend the ingredients together using your fingertips or a pastry blender until the mixture resembles coarse crumbs. Gradually add water to the mixture until it just comes together.
