Southern Onion Soup
Ingredients
  • 4 tablespoons butter
  • 1 onion, sliced
  • 1/2 teaspoon dried thyme
  • 5 (10.5 ounce) cans beef consomme
  • 6 bay leaves
  • 1/2 cup white wine
  • 1 French baguette, cut into 1/2 inch slices
  • 2 cups shredded mozzarella cheese
Instructions
1
Heat your oven to the desired temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).
2
Melt butter in a large cooking vessel over medium-high heat, then add the onion and cook for 5 to 10 minutes, or until it reaches a tender state. Introduce thyme into the mixture and then take the skillet off the heat source.
3
In a large cooking vessel over high heat, combine the consommé, bay leaves, and white wine. Bring the mixture to a boil, then lower the heat to low, stir in the cooked onions, and cook until heated through, taking around 10 to 15 minutes.
4
Divide the soup into four individual oven-safe containers, filling each one about three-quarters full. Place two baguette slices on top of each bowl and cover with mozzarella cheese.
5
Place the bowls in the preheated oven until the mozzarella is melted and bubbly, requiring 10 to 15 minutes.
