Ingredients
- 1 pound dried baby lima beans
- 2 quarts water
- 2 onions, coarsely chopped
- 1 meaty ham bone
- 1 cup leftover ham meat from bone, chopped
- 3 cups water, or as needed to cover
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon garlic salt, or to taste
- 1 pinch cayenne pepper
Instructions
1
Soak the lima beans in a substantial amount of water, approximately 2 quarts, within a large container for an extended period of time, either 8 hours or overnight. The following day, remove the lima beans from the water and transfer them to a slow cooker with sliced onions, a ham bone, and diced ham. Add 3 cups of water as necessary to ensure the lima beans are completely submerged. Close the lid on the cooker and set it to High heat. Cook for 3 hours, allowing the lima beans and ham to become tender.
2
Stir in a blend of spices, including Cajun seasoning, black pepper, garlic salt, and cayenne pepper. Set the cooker to Low heat and continue cooking until the lima beans and ham are extremely tender, approximately 4 additional hours.
