Preheat the cooking vessel by heating the bacon grease over a moderate flame in a large skillet. In a separate, small container, combine the dry ingredients - flour, cornmeal, and pepper - and stir them together. In another small container, use a fork to mix the egg and milk until well blended.

Dip each tomato slice into the mixture of egg and milk, coating it evenly, then roll it in the dry mixture to coat. Gently place the breaded tomato slices into the hot bacon grease, taking care not to splash the oil. Cook until both sides are golden brown, approximately 3-4 minutes per side.
