Ingredients
- 2 cups cornmeal
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons baking powder
- 2 eggs
- 1 cup margarine, melted
- 4 cups buttermilk
- 1/4 cup corn oil
Instructions
1
Combine cornmeal, flour, salt, and baking powder in a spacious container. 'Mix these dry ingredients thoroughly until they are evenly distributed.
2
In another container, combine eggs, melted butter, and buttermilk. 'Blend these wet ingredients well until they are fully incorporated.
3
Gradually add the wet ingredients to the dry ingredients and stir until everything is well combined.
4
Preheat a 12-inch cast iron skillet over extremely high heat for 2 minutes. 'Add corn oil to the skillet, swirl it around to coat the bottom and sides of the pan, leaving some oil in reserve. 'Return the skillet to extremely high heat for another minute.
5
Pour the cornbread batter into the skillet and cook on extremely high heat until bubbles start to form in the center. 'Remove the skillet from the stove.
6
Transfer the cornbread mixture to a preheated oven at 400 degrees Fahrenheit (200 degrees Celsius) for 40 to 50 minutes, or until a knife inserted into the center comes out clean. 'Serve the warm cornbread.
