Southern Chocolate Meringue Pie
Ingredients
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/3 cups white sugar
  • 3 egg yolks
  • 1 (12 fluid ounce) can evaporated milk
  • 3 tablespoons butter
  • 1 (9 inch) pie shell, baked
  • 3 egg whites
  • 1/8 teaspoon cream of tartar
  • 6 tablespoons white sugar
Instructions
1
Preheat the oven to its optimal temperature of three fifty degrees Fahrenheit or one seventy five degrees Celsius. Combine the dry ingredients, specifically flour and cocoa powder, in a cooking vessel.
2
In a separate mixing container, blend one and a third cups of sugar with egg yolks using an electric whisk until well combined. Gradually incorporate evaporated milk into the mixture, stirring continuously to avoid lumps.
3
Carefully pour the milk-sugar-egg yolk mixture into the saucepan containing the flour-cocoa powder combination. Continue whisking until the two mixtures are fully incorporated.
4
Cook over medium heat, stirring constantly with a flat-bottomed wooden spoon or spatula, until the mixture thickens and forms a smooth, even layer on the back of the spoon, approximately fifteen minutes.
5
Remove the saucepan from the heat source and stir in melted butter until fully incorporated. Pour the mixture into a pie crust.
6
In a clean, dry mixing bowl, beat egg whites and cream of tartar using an electric mixer until they become light and fluffy. Gradually add the remaining six tablespoons of sugar, one tablespoon at a time, continuing to beat until stiff peaks form.
7
Spread the meringue mixture evenly over the chocolate filling. Place the pie in the preheated oven and bake until the tips of the meringue peaks are golden brown, approximately ten minutes.
