Ingredients
- 1/2 pound skinless, boneless chicken breast halves - cut into chunks
- 1 carrot, peeled and cut into 1 inch pieces
- 1 egg white
- 2 teaspoons cornstarch
- 1/2 teaspoon white sugar
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground black pepper
- 4 slices white bread
- 2 1/2 tablespoons margarine
- 1/3 cup soy sauce

Combine chicken, carrot, egg white, cornstarch, sugar, ginger, and black pepper in a food processor. Process until the chicken is finely chopped.

Separate slices of bread into individual portions and cut each one into four triangular shapes.

Spread a generous amount of the chicken mixture onto the top and sides of each triangle, making sure to cover them evenly.

Heat half of the margarine in a 12-inch non-stick frying pan over medium heat. Place half of the bread triangles, with their spread sides facing down, in the pan. Cook for approximately 4 minutes or until they turn golden brown. Flip them over with a spatula and cook for another 2 minutes or until the other side is also browned. Transfer the cooked triangles to a serving platter and keep them warm. Repeat the process with the remaining bread triangles and margarine. Serve hot with a dipping sauce made by mixing soy sauce with water.
