- 2 cups uncooked grits
- 3 cups shredded Cheddar cheese, divided
- 1/2 cup butter, cut into pieces, divided
- 1 pound ground pork sausage
- 12 large eggs
- 1/2 cup milk
- salt and pepper to taste

Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (175 degrees Celsius).

To prevent sticking, lightly coat a large baking dish with oil or cooking spray.

In a separate pot, bring water to a rolling boil and then add grits. Gradually stir in the grits until they are well combined with the water, then reduce heat and let simmer for 5 minutes or until all liquid has been absorbed.

Melt 2 cups of Cheddar cheese and half of the butter in a saucepan over low heat, stirring constantly until smooth.

Cook sausage in a skillet over medium-high heat until it reaches your desired level of browning, about 5 to 7 minutes. Remove from heat and add it to the grits mixture.

In a separate bowl, whisk together eggs and milk until well combined. Pour the egg mixture into the same skillet used to cook the sausage, then gently scramble it over low heat until cooked through. Mix into the grits mixture.

Pour the entire grits mixture into your prepared baking dish, then dot the top with any remaining butter. Sprinkle with the rest of the 1 cup Cheddar cheese, and season to taste with salt and pepper.
