- 1 1/2 cups apple cider
- 1 cup dark brown sugar
- 1 tablespoon yellow mustard seed
- 2 tablespoons Dijon mustard
- 1/2 cup tomato paste
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2 smoked pork neck bones

Combine the acidic properties of cider vinegar with the rich flavors of fresh cider, brown sugar, and a hint of spice from mustard seeds in a heavy-bottomed saucepan over medium heat.

Simmer the mixture for approximately 30 to 40 minutes, allowing it to thicken and develop a rich consistency.

As the mixture reduces, gently remove any foam that forms on its surface and discard it, as it is not intended for consumption.

Next, carefully remove the neck bones from the saucepan and discard them, leaving you with a smooth and unobstructed surface.
