Southern Brunswick Stew
Ingredients
  • 1 tablespoon olive oil
  • 1 cup chopped onions
  • 2 stalks celery, chopped
  • 1 1/2 pounds ground pork
  • 1 1/2 pounds ground beef
  • 1 (3 pound) whole cooked chicken, deboned and shredded
  • 3 (14.5 ounce) cans whole peeled tomatoes with liquid, chopped
  • 1 cup ketchup
  • 1/2 cup hickory-flavored barbecue sauce
  • 1 teaspoon hot sauce to taste
  • salt and pepper to taste
  • 1 medium green bell pepper
  • 3 (14.75 ounce) cans cream style corn

Preheat a large stockpot over medium heat by warming oil in it. Introduce sliced onions and diced celery into the pot; stir constantly until they become transparent, approximately 5 minutes. Combine ground pork and ground beef in the pot; stir frequently until they are evenly browned, about 10 minutes. Do not discard any excess liquid.

Add shredded chicken, crushed tomatoes and their juice, ketchup, barbecue sauce, hot sauce, salt, and pepper to the pot. Submerge a whole green pepper into the mixture, ensuring it's fully covered. Lower the heat to low and cook, stirring occasionally, until the stew thickens, roughly 2 hours.

Add frozen corn to the pot and continue cooking for an additional hour, or until you achieve your desired consistency. Remove the green pepper from the pot and chop it into smaller pieces, then return it to the stew or discard it as desired.
