Ingredients
- 1/2 pound ground turkey
- 1/4 cup chopped onion
- 1 (16 ounce) can stewed tomatoes, undrained
- 1 (.75 ounce) packet brown gravy mix
- 1 teaspoon chili powder, or to taste
- 1/2 cup frozen corn kernels
- 1/2 cup uncooked elbow macaroni
- 1 cup shredded lettuce
- 3 tablespoons sour cream
- 2 cups corn tortilla chips

Begin by filling a small saucepan with salted water and placing it on the stovetop. Bring the water to a rolling boil before adding your macaroni. Cook the pasta until it is almost fully cooked, approximately 6 minutes should pass. Remove from heat and set the macaroni aside for now.

In a larger skillet, heat some oil over medium heat and add the turkey. Cook and stir constantly until the meat is evenly browned, about 5 minutes should have passed. Remove excess oil from the skillet before adding the onion to browned turkey meat and cooking until it's tender, roughly 5 minutes have passed. Stir in the tomatoes, gravy mix and chili powder until everything is well combined then add the corn and macaroni to the mixture. Cover the skillet with a lid; reduce heat to low and let it simmer, stirring occasionally for about 10 minutes.

Serve the macaroni mixture in a bed of tortilla chips, topped with shredded lettuce and a dollop of sour cream.
