- 1 1/2 cups water
- 1 red onion, finely chopped
- 1 clove garlic, minced
- 1/4 cup fresh cilantro, chopped
- 1/4 teaspoon white sugar
- 1/2 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 2 teaspoons whole mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 pinch cayenne pepper
- 3 tablespoons rice vinegar
- 1 tablespoon vegetable oil
Instructions

Combine the brown rice and whole wheat flours in a mixing bowl, stirring them together until well incorporated. Gradually add the water to create a smooth and thin mixture.

Add the finely chopped onion, minced garlic, chopped cilantro, sugar, turmeric powder, ground cumin, mustard seeds, cumin seeds, ground coriander, grated ginger, and the spicy cayenne pepper until everything is well combined.

Cover the bowl with a lid, and refrigerate for at least half an hour or even overnight to allow the flavors to meld.

To cook the dosas, heat a moderate amount of oil in a skillet over medium heat.

Pour 1/4 cup of the batter mixture into the skillet, spreading it evenly over the bottom surface in a thin layer.

Cook for 1 minute, flip and cook for another minute more.

Remove the cooked dosa from the pan and repeat with the remaining batter mixture.
