South African Sticky Pudding

  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons distilled white vinegar
  • 2 tablespoons apricot jam
  • 2 cups milk
  • 1 cup sugar
  • 1 cup water
  • 1 cup milk
  • 1/2 cup butter or margarine
  • 2 teaspoons vanilla

Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius).

Combine two cups of sugar and eggs in a large mixing bowl using an electric mixer until the mixture becomes light, airy, and fluffy. Gradually add in flour, baking powder, baking soda, salt, vinegar, and apricot jam until well incorporated.

Add two cups of milk to the mixture and stir until everything is fully combined. Pour the batter into a well-greased, two-quart oven-safe baking dish.

Bake in your preheated oven for 60 to 70 minutes, or until a knife inserted into the center comes out clean. Use a skewer or fork to pierce the baked pudding several times.

Combine one cup of sugar, water, one cup of milk, butter, and vanilla in a saucepan. Heat the mixture over medium heat until it comes to a boil.

Immediately remove the saucepan from the heat and slowly pour the hot mixture over the baked pudding. Serve warm.
