Heat milk, 2 tablespoons of unsalted butter, and white vinegar in a small saucepan over low heat until the butter has melted. Take the saucepan off the heat; set it aside for now.

Separately, whisk together 1 cup of fine sugar and eggs in a separate bowl using an electric mixer on high speed until the mixture becomes light, fluffy, and almost doubles in volume, taking about 5 minutes. Gradually incorporate the apricot jam into this mixture.
