- 1 tablespoon vegetable oil
- 1 large onion
- 1 cup cubed lamb stew meat
- 12 ounces dried apricots
- 8 kabob skewers

Combine the yogurt, curry powder, sugar and oil in a small bowl to create the marinade. Sample the mixture and make any necessary adjustments to suit your taste preferences.

Next, carefully separate the onion into 1 inch cubes. Thread lamb cubes and dried apricot halves onto skewers, alternating them in a harmonious pattern. Place the prepared kabobs into a large resealable container and pour in the marinade, ensuring they are evenly coated. Cover the bag and refrigerate overnight or for at least 8 hours to allow the flavors to meld.
