Submerge a large pot in a sink filled with water and position a sous vide immersion cooker within the water. Follow the manufacturer's guidelines to set the desired temperature, which is 170 degrees Fahrenheit (77 degrees Celsius). Wait until the water reaches this temperature before carefully placing eggs into the pot using a slotted spoon. Set a timer according to the manufacturer's instructions for 40 minutes.

Once the timer goes off, carefully lift the eggs out of the water using a slotted spoon and transfer them to a large bowl. Gently rock the bowl back and forth to crack the eggs. Immediately submerge the bowl in a container filled with ice water to rapidly cool down the eggs. Finally, peel the eggs under a gentle stream of running water.
