Sonoran Corn Flour Cookies
Ingredients
  • 1 pound vegetable shortening
  • 1 3/4 cups white sugar
  • 4 eggs
  • 2 oranges, zested
  • 1 tablespoon vanilla extract
  • 2 pounds white masa harina (corn flour)
  • 3 tablespoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon all-purpose flour
Instructions
1
Combine shortening, sugar, and eggs in a large mixing container using an electric mixer until it reaches a smooth consistency. Incorporate orange zest and vanilla into the mixture.
2
In another mixing container, blend corn flour, baking powder, cinnamon, and all-purpose flour until well combined. Gradually add half of the dry mixture to the shortening mixture, blending on low speed until they merge. Add the remaining dry mixture and knead with your hands until a unified dough forms.
3
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
4
Form a small portion of dough into a thin, cylindrical shape and pinch the ends together to create a circular ring. Place it onto an ungreased baking sheet. Repeat this process with the remaining dough, spacing the rings closely together on two separate baking sheets as desired; they will not spread.
5
Bake in the preheated oven until the rings are golden brown all over, taking approximately 45 minutes, and switch the racks halfway through.
6
Remove from the oven and transfer to wire racks to cool.
