- 1/4 cup peanuts
- 2 Thai chiles, chopped
- 3 cloves garlic
- 1 tablespoon dried shrimp
- 1 tablespoon white sugar
- 2 medium limes, juiced
- 2 tablespoons fish sauce
- 1 medium papaya - peeled, seeded, and sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh green beans, cut into 1-inch pieces
- 1/2 medium carrot, peeled and shredded
- salt and ground black pepper to taste

Firstly, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). Next, place the peanuts on a baking sheet in the oven.

Allow the peanuts to toast in the preheated oven for 7 to 8 minutes, or until they are nicely fragrant and have a browned hue. Remove the peanuts from the oven and let them cool down for 5 minutes.

In a mortar or food processor, grind the roasted peanuts along with Thai chilies, garlic, dried shrimp, and sugar until you get a smooth paste.

Mix in some lime juice and fish sauce to create the dressing for your salad.

Toss together papaya, tomatoes, green beans, and carrot with the dressing. Finally, season your salad with a pinch of salt and pepper to taste.
