Ingredients
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter
- 1/2 cup reduced-fat creamy peanut butter (such as Jif®)
- 1/2 cup reduced-fat crunchy peanut butter (such as (Jif®)
- 1 egg white
- 1/3 cup white sugar
- 1 egg
- 1/3 cup brown sugar

First, preheat the oven to 300 degrees F (150 degrees C). Next, combine flour, baking soda, and salt in a bowl and sift them together.

In another large bowl, cream butter with creamy peanut butter until smooth. Then, blend in crunchy peanut butter and continue to mix until well combined.

Add egg white and white sugar to the bowl, blending them together with butter mixture until smooth. Next, incorporate whole egg and brown sugar into the mix.

Gradually add flour mixture to butter mixture, blending until batter is thoroughly incorporated.

Take small portions of the dough and shape into 1 1/4-inch balls. Place these balls 2 inches apart on ungreased baking sheets.

Using a fork, press each ball into the baking sheet to create a crosshatch pattern. Allow cookie dough to firm up on the baking sheet for 5 to 8 minutes.

Place the frozen cookie dough balls back onto the preheated baking sheets and bake until cookies rise, approximately 15 minutes.

Once done, remove the cookies from baking sheets and let them cool for 10 minutes on the pans. Finally, transfer the cooled cookies to a wire rack for complete cooling.
