Ingredients
- 2/3 cup warm water (110 degrees F/45 degrees C)
- 1 teaspoon active dry yeast
- 1 teaspoon white sugar
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons plain yogurt
- 1/4 cup ghee
- 2 teaspoons kalonji (onion seed)

Combine warm water with yeast and sugar in a bowl, stirring until the yeast is fully incorporated. Allow it to rest in a warm environment for 10 minutes.

Next, sift flour and salt into a large mixing bowl three times to ensure they are well combined. Then, add the yeast mixture, yogurt, and half of the ghee to the bowl. Mix everything together until you have a smooth dough. Knead the dough on a floured surface for 5 minutes, until it becomes elastic and smooth.

Transfer the dough to a greased large bowl and cover it with a clean cloth. Let it rise in a warm place for 1 1/2 hours, or until the dough has doubled in size.

Now, punch down the dough and knead it for another 5 minutes. Divide the dough into six equal pieces, making sure they are all roughly the same size.

Roll out each piece of dough into an 8-inch round shape. To prepare for baking, cover a large oven tray with foil and grease the foil thoroughly.

Brush each dough round with the remaining ghee and sprinkle with kalonji. Place one of the dough rounds under the broiler, cooking it for 2 minutes on each side until it is puffed and lightly browned.
