  • 1 whole chicken, cut into pieces
  • 3 teaspoons salt, divided
  • 3/4 teaspoon ground black pepper, divided
  • 3/4 cup all-purpose flour
  • 3 cups chopped yellow onions
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 3 cloves garlic, chopped
  • 3 tablespoons all-purpose flour
  • 3 cups chicken broth
  • 1/4 teaspoon cayenne pepper

Acquire the necessary components.

Heat a large skillet over medium-high heat, and melt butter in it. Sprinkle chicken pieces with 1 teaspoon of salt and 1/2 teaspoon of pepper to add flavor.

Prepare a shallow dish with 3/4 cup of flour, and coat the chicken pieces evenly in it. Place the coated chicken in the skillet, sear on all sides until browned, and set it aside. Reserve about 1 tablespoon of butter from the skillet.

Lower the heat to medium-low in the skillet, and sauté onions, carrots, celery, and garlic until they're tender. This should take about 5 minutes.

Mix in another 3 tablespoons of flour, and continue cooking for an additional 5 minutes. Pour in chicken broth, add a pinch of cayenne pepper to give it a kick, and sprinkle with the remaining salt and pepper.

Bring the mixture to a boil, then reduce the heat to low.

Return the chicken to the skillet, cover it with a lid, and continue cooking until the juices run clear and the gravy has thickened, approximately 30 minutes.
