- 2 pounds fresh tomatillos, husks removed
- 10 dried chile de arbol peppers
- 2 cloves garlic, unpeeled
- salt to taste

Preheat a heavy cast iron grill pan or griddle over extremely high heat. Cover the surface with aluminum foil and place it on the stovetop. Bring the grill pan to a scorching hot state, 5 minutes later you should see it smoking.

Spread the tomatillos, chiles de arbol, and garlic in a single layer on top of the grill pan. Continue to cook until the chiles are completely charred, flipping them occasionally as they develop a deep black color. This should take around 3 to 5 minutes, depending on the heat.

Transfer the blackened mixture to a bowl and continue cooking the remaining ingredients. Grill the tomatillos and garlic for an additional 8 to 10 minutes, stirring occasionally until they too have developed a deep black color.

Remove the garlic from the grill pan and transfer it to a mortar. Add salt and pound the garlic into a thick, smooth paste. Combine this with the blackened chiles.

Add as many tomatillos as possible to the mortar, pounding them into a chunky mixture. Transfer this salsa to a bowl and repeat the process with the remaining tomatillos, mixing them into the bowl in batches.

Serve the homemade salsa with tortilla chips for a delicious and easy snack.
