Ingredients
- 1 (12 ounce) package bacon, cut into small pieces
- 1/2 onion, diced
- 2 pounds large cooked shrimp - peeled, deveined, and cut in half
- 3 chipotle peppers in adobo sauce, minced
- 12 corn tortillas
- 1 cup chopped fresh cilantro
- 1 lime, juiced
- 1 pinch salt to taste

Fry the bacon in a large, deep skillet over high heat until it reaches an even golden brown colour. Remove the cooked bacon from the pan and discard the excess fat. Add sliced onions to the same skillet with the remaining bacon fat and cook for 5 minutes or until they become soft and translucent.

Next, add the shrimp to the pan along with the chipotle chiles and stir well. Continue cooking for 4 minutes or until the shrimp are heated through and the mixture is hot.

Meanwhile, warm tortillas in a dry skillet over high heat for 10 to 15 seconds on each side. Flip the tortillas and cook for another 5 to 10 seconds.

Finally, fill each warmed tortilla with the cooked shrimp mixture and top it off with a sprinkle of fresh cilantro, a squeeze of lime juice, and a pinch of salt.
