Ingredients
- 1 pound smoked sausage
- 2 teaspoons vegetable oil
- 1 medium onion, diced
- 2 (15.5 ounce) cans chickpeas (garbanzo beans), undrained
- 1 (4 ounce) can tomato sauce
- 3 tablespoons sherry wine or Marsala
- 2 teaspoons dried oregano
- 2 teaspoons red pepper flakes
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 3 teaspoons adobo seasoning

Cut the sausage into long, thin strips by making a horizontal incision down its center. Then, divide these strips into smaller pieces of approximately 0.625 centimeters in length.

Heat a substantial amount of oil in a large cooking vessel over a moderately high heat setting. Allow the sausage to cook for around 5 minutes, giving it a golden brown color on all sides. Next, add the sliced onion to the pot and stir it in; continue cooking for another 5 minutes. Subsequently, add the chickpeas and their accompanying liquid, tomato sauce, and sherry to the pot. Season the mixture with oregano, red pepper flakes, black pepper, garlic powder, and adobo seasoning. Finally, let the ingredients simmer together occasionally for at least 10 minutes; a longer cooking time of 1 hour or more is recommended.
