Smoky Irish Wolfhound Cocktail
Ingredients
  • 1 ruby red grapefruit
  • 1/2 teaspoon smoked salt, or to taste
  • 4 pieces crystallized ginger, divided
  • ice cubes, or as needed
  • 3 fluid ounces Irish whiskey
  • 2 cups crushed ice, or as needed
  • 2 ounces ginger beer (such as Fever TreeĀ®)

Preheat your outdoor grill to its highest temperature setting.

Cut a grapefruit in half lengthwise, then cut one of the halves into a thin slice, roughly 1/8 inch thick. Sprinkle both sides of this grapefruit slice with smoked salt.

Place the cut-side down half and the thin slice on the hot grill, alongside the other grapefruit halves. Grill until they develop a slight char and visible grill marks appear, flipping the slice halfway through, approximately 2 to 3 minutes. Remove from the grill and let it cool down.

Squeeze the juice from both grapefruit halves, then set them aside. Cut the grapefruit slice into 6 wedges.

Add 2 slices of crystallized ginger and 4 wedges of sliced grapefruit to a cocktail shaker. Use a muddler to gently mash the crystallized ginger and grapefruit, releasing their flavors.

Fill the shaker with ice cubes, whiskey, and 3 fluid ounces of grapefruit juice. Close the lid and shake vigorously until chilled, around 15 to 20 seconds.

Fill two rocks glasses with crushed ice and divide the cocktail mixture amongst the two glasses. Top each glass off with 1 fluid ounce of ginger beer. Garnish with the remaining grapefruit wedges and crystallized ginger.
