Smoky Ham and Bacon Chowder

  • 8 cups chicken or ham stock
  • 4 cups cubed Country ham
  • 4 tablespoons dried rosemary
  • 2 pounds bacon, diced
  • 6 green onions, diced
  • 3 leeks, diced
  • 2 large onions, diced
  • 3 cloves garlic, minced
  • 6 large potatoes, cubed
  • 1 pound carrots, cubed
  • 1 1/2 cups heavy cream

Begin by heating the stock in a large pot over medium heat, allowing it to reach a gentle simmer. Next, add the diced ham and 2 tablespoons of fresh rosemary leaves to the pot, stirring until they're fully incorporated.

Meanwhile, cook the crispy bacon strips in a large skillet over medium heat, constantly turning them until they reach your desired level of crispiness. Using a slotted spoon, transfer the cooked bacon to the pot, reserving the rendered bacon fat in the skillet. Reheat the reserved bacon grease in the skillet over medium heat.

Add the chopped green onions, leeks, and onions to the skillet with the reserved bacon fat, stirring occasionally until they're tender. Then, add them to the pot along with the diced garlic.

Add the sliced potatoes, carrots, and an additional 2 tablespoons of fresh rosemary leaves to the pot. Continue to simmer the mixture over medium heat until the vegetables are tender, approximately 20 minutes.

Once the cooking time is up, remove the pot from the heat source and stir in the heavy cream.
