- 2 medium eggplants, cut into 1/2-inch slices
- 2 medium green bell peppers, cut into 1/2-inch slices

Combine olive oil, soy sauce, balsamic vinegar, salt, and pepper in a spacious container. Mix these ingredients thoroughly until they are well blended. Add sliced zucchini, eggplants, and bell peppers to the container; gently stir them in so they are evenly coated. Cover the container with plastic wrap and let it sit for approximately 45 minutes.
