  • 2 tablespoons balsamic vinegar

  • 3 medium zucchinis, cut into 1/2-inch slices
  • 2 medium eggplants, cut into 1/2-inch slices
  • 2 medium green bell peppers, cut into 1/2-inch slices

Combine olive oil, soy sauce, balsamic vinegar, salt, and pepper in a spacious container. Mix these ingredients thoroughly until they are well blended. Add sliced zucchini, eggplants, and bell peppers to the container; gently stir them in so they are evenly coated. Cover the container with plastic wrap and let it sit for approximately 45 minutes.

Prepare an outdoor grill by preheating it to a medium heat setting. Lightly brush the grill grate with oil to prevent sticking. Remove the vegetables from their marinade and gently shake off any excess; reserve the remaining marinade for later use.
