- 2 slices cured lemon
- 1/2 cup mayonnaise
- 1 tablespoon minced fresh tarragon
- 1 teaspoon lemon juice
- 1 pound extra large shrimp, peeled and deveined
- 2 teaspoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt

Rinse cured lemons under cold running water to rinse away the curing liquid, for about 10 minutes. Pat dry lemons with paper towels and chop them into tiny pieces.

Combine the minced lemon, mayonnaise, tarragon, and freshly squeezed lemon juice in a bowl. Cover the bowl with plastic wrap and refrigerate the mixture until it's well chilled, at least 15 minutes.

Heat up your outdoor grill to extremely high temperatures and lightly brush the grates with oil.

Place the shrimp in a bowl. Drizzle olive oil over them and sprinkle paprika and salt to taste, ensuring the shrimp are evenly coated.

Grill the shrimp over high heat until they turn a vibrant pink on the outside and the meat is opaque throughout, about 2 minutes per side. Transfer the cooked shrimp to a plate and serve with a side of chilled lemon aioli.
