Smoky Fire-Roasted Tex-Mex Salsa

  • 5 large Roma tomatoes, halved lengthwise
  • 1/4 large white onion
  • 1 jalapeno pepper, stem removed
  • 1/3 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 1/2 teaspoons garlic salt, or to taste

Position the oven rack approximately 6 inches away from the heat source and set the broiler to its highest setting.

Spray a 9x13-inch glass casserole dish with cooking spray, ensuring it is thoroughly coated. Arrange the tomatoes in the prepared dish, placing them cut-side down. Add sliced onion and diced jalapeno to the dish as well.

Place the dish under the broiler and cook until the tomato skins are darkened and blistered, requiring 10 to 15 minutes. Remove the onion and jalapeno from the dish halfway through the cooking time, once the skins have begun to soften slightly.

Transfer the cooked vegetables to a blender and combine them. Add chopped cilantro, freshly squeezed lime juice, and 1 teaspoon of garlic salt to the blender. Pulse the mixture until it reaches a smooth consistency. Taste and adjust the seasoning with additional garlic salt if necessary.
