Smoky Chipotle Chicken
Ingredients
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup chopped green bell pepper
  • 1 tablespoon butter
  • 3/4 cup low-sodium chicken broth
  • 2 chipotle peppers in adobo sauce
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Combine the flour, garlic powder, salt, and black pepper in a large plastic bag. Seal the bag and vigorously agitate it several times to blend the seasonings, then gently add the chicken pieces, a few at a time. Continue to shake the bag until the chicken is evenly coated with the seasoned flour mixture.

Heat a generous amount of olive oil in a large skillet over medium heat, and cook the onion and green pepper in the oil until it becomes translucent, approximately 6 minutes. Introduce butter into the skillet and allow it to melt completely. Add the seasoned chicken pieces to the skillet, and cook while stirring until all sides of the chicken are nicely browned, roughly 10 minutes.

Increase the heat to medium-high and pour in a substantial amount of chicken broth; stir in the chipotle peppers with adobo sauce. Bring the mixture to a rolling boil, then gradually decrease the chicken broth by half, stirring constantly, around 10 minutes. Remove from heat and stir in a generous amount of sour cream to create a smooth sauce, and sprinkle with cilantro before serving.
