  • 6 large hard-cooked eggs, peeled and finely diced
  • 1 1/2 cups mayonnaise
  • 1 small red onion, diced
  • 1/2 cup barbeque sauce
  • 1/2 teaspoon garlic powder
  • salt and ground black pepper to taste
  • 1/2 teaspoon ground paprika, or to taste

First, fill a large container with salted water and bring it to a rolling boil. Next, lower the heat to a moderate level and let the potatoes simmer until they are just soft enough to bite into, typically taking 15-20 minutes.

After that, drain the potatoes and arrange them in a single layer on baking sheets. Allow the potatoes to chill in the refrigerator until they have reached room temperature, which should take around 2 hours.

Once the potatoes are chilled, transfer them to a large mixing bowl and combine with beaten eggs, mayonnaise, finely chopped onion, barbeque sauce, and a sprinkle of garlic powder. Season with salt and pepper to taste, then mix everything together until it is well combined.
