Ingredients
- 2 cups dry navy beans, soaked overnight
- 1/2 pound uncooked bacon strips
- 1 medium onion, diced
- 1/2 cup ketchup
- 3 tablespoons molasses
- 1/4 cup brown sugar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dry mustard
Instructions
1
Transfer the soaked navy beans along with their soaking water to a saucepan.
2
Heat it up until it reaches a rolling boil. Then, decrease the heat and let it simmer for about 1 to 2 hours, or until the beans are almost tender.
3
Remove from heat and set aside, reserving the cooking liquid that was left over.
4
Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).
5
Layer half of the navy beans in the bottom of a 2-quart casserole dish. Place half of the bacon strips on top of the beans, followed by half of the onions.
6
Repeat this layering process one more time to create a stacked effect.
7
In a large saucepan, combine ketchup, molasses, brown sugar, Worcestershire sauce, salt, pepper, and dry mustard over medium heat. Bring the mixture to a boil.
8
Pour this sauce over the navy beans, adding just enough of the reserved cooking liquid to cover them completely. Cover the casserole dish with a lid or aluminum foil.
9
Bake in the preheated oven for 1 and a half hours. Remove the lid and continue to cook, checking every half hour or so until the beans are soft and tender, which may take an additional 1 and a half to 2 and a half hours.
10
Serve the dish hot, straight from the oven.
