Ingredients
- 1 pound sliced bacon
- 1 (16 ounce) package elbow macaroni
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup white sugar
- 1/4 cup cider vinegar
- 2 tablespoons prepared yellow mustard
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 tomatoes, seeded and chopped
- 1 large cucumber, peeled and chopped
- 4 hard-cooked eggs, chopped
- 1/2 cup chopped celery
- 1/2 cup sliced green olives
Instructions
1
Begin by placing the bacon in a substantial, deep frying pan over high heat. Allow it to cook until it reaches a crispy state and an even golden brown color, stirring occasionally. Remove from heat, crumble into smaller pieces, and set aside for later use.
2
Next, prepare a large container of salted water to reach its boiling point. Cook the pasta until it reaches an al dente texture, which should take around 8-10 minutes. Remove from heat and rinse with cold water to stop the cooking process.
3
In a separate, large mixing bowl, combine mayonnaise, sour cream, sugar, vinegar, mustard, salt, and pepper. Whisk these ingredients together until the sugar has fully dissolved into the mixture.
4
Now, add the cooked bacon to this bowl and gently fold it in with the dressing. Then, incorporate the pasta, diced tomato, sliced cucumber, hard-boiled eggs, and chopped celery into the mixture. Continue to gently fold until all of these ingredients are evenly coated in the dressing.
5
Finally, sprinkle a layer of sliced olives over the top of this salad before serving.
