Smoky Bacon Baked Beans

  • 6 slices bacon
  • 2 (16 ounce) cans baked beans
  • 1 onion, diced
  • 1 Granny Smith apple - peeled, cored and diced
  • 1 cup packed brown sugar
  • 3/4 cup ketchup
  • 1/4 cup yellow mustard

Preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).

In a large skillet, cook the bacon over high heat, stirring occasionally, until most of the fat has been extracted and the bacon remains slightly pliable. Remove it from heat and place it on paper towels to drain excess moisture, setting it aside for later use.

In a 9-inch square baking dish, mix together the baked beans, chopped onion, diced apple, brown sugar, ketchup, and mustard until you have a well-blended mixture. Then, top this bean mixture with the cooked bacon slices.

Place the baking dish in your preheated oven and bake it, uncovered, until the bacon is crispy and the beans are boiling vigorously, taking around 45 minutes to achieve this result.
