Ingredients
- 1 1/3 cups water
- 3 tablespoons olive oil
- 2 tablespoons liquid smoke flavoring
- 2 (1 ounce) packages fajita seasoning
- 4 large avocados - peeled, pitted, and sliced into 1/2-inch wedges
- 4 large bell peppers - stemmed, seeded, and sliced into 1/2-inch wedges
- 1 extra large onion, sliced into rings and rings separated
- 12 (6 inch) flour tortillas
Instructions
1
Combine water, oil, liquid smoke, and fajita seasoning in a bowl and blend until well combined. Transfer the mixture to a resealable plastic bag and add sliced avocados, diced bell peppers, and chopped onions. Coat the vegetables with the marinade, remove any excess air, and seal the bag tightly.
2
Allow the marinated mixture to sit in the refrigerator for a period of 1 hour or up to overnight, stirring occasionally.
3
Preheat your oven to 225 degrees Fahrenheit (110 degrees Celsius). Place a stack of tortillas in the oven and cover them with aluminum foil to warm them up.
4
Heat your grill over medium heat, lightly oil the grates, and cook the vegetables in batches using tongs until they are tender, about 5 to 10 minutes, turning them as needed.
5
Transfer the cooked vegetables to an oven-proof pan and cover them with aluminum foil. Place the pan in the preheated oven to keep the vegetables warm.
6
Place sliced avocados on the grill, cook for a short while, turning once, until they are lightly browned, approximately 5 minutes.
7
Fill the warmed tortillas with the avocado and onion mixture. Roll or fold the tortilla around the filling to create a delicious dish.
