- 1/4 cup mayonnaise
- 2 ciabatta rolls
- 1 tablespoon olive oil, divided
- 2 slices provolone cheese
- 1 cup whole fresh spinach leaves, divided
- 1/4 pound thinly sliced mesquite smoked turkey breast
- 2 roasted red peppers, sliced into strips

Combine mashed avocado and mayonnaise in a bowl until they are fully incorporated.

Heat up the panini sandwich press to its optimal temperature.

Anoint the underside of each roll with a generous amount of olive oil, then position them on the press with their oiled sides facing downwards. Add a slice of cheese, half a handful of spinach leaves, half a serving of sliced turkey, and half a serving of sliced peppers to each roll on the press. Spread a layer of the avocado-mayonnaise mixture onto the cut surface of each top roll, followed by placing the top roll on each sandwich. Give the top of each roll a light coating of olive oil.

Seal the panini press and cook until the rolls are toasted and crispy, with a golden brown crust forming on the grill marks, and the cheese has melted to perfection, taking anywhere from 5 to 8 minutes.
